When a Passing Grade is not Good Enough

Some ideas are great on paper and some food combinations sound better than they taste. Squash soup falls in the latter category for me. I have never been very impressed by the restaurant version. So I tried to make it from scratch by roasting an acorn squash and then cooking its mushy innards with onions, garlic, a tablespoon of chipotle peppers in adobo sauce. The Boy liked the results as is. I thought it was okay with a swirl of sour cream...just okay.
